  • Spoon

Instructions:

  1. Soak the popping boba in calcium lactate for about 1 minute. The dropping process may take a while so we recommend scooping out the popping boba after 2 or 3 batches. Note that if it is left for an extended period, the boba’s shell will thicken and prevent it from popping or bursting as intended.
  2. Blend the mango cubes, water, and sodium alginate until smooth.
  3. Place the mixture into a large bowl and remove any bubbles on top using a spoon. Cover the large bowl with a plastic wrap and leave it for 4 hours or overnight.
  4. In another bowl, whisk together cold water and calcium lactate until the water turns transparent again.
  5. Use a dropper (like a syringe or squeeze bottle) to drop the mango/sodium solution into the calcium water. Watch as they quickly turn into spheres.  Do it one drop at a time.
  6. Use a strainer to get the boba out of the calcium water after a minute and transfer them to a different bowl of water for rinsing. Keep repeating this until all the popping boba is done.
