When the popularity of bubble tea began to rise, so did the demand for unique and exciting toppings. Enter popping boba – a burst of fruity flavor wrapped in a thin gelatinous shell. This fun and tasty topping has become a staple in many cafes and tea shops worldwide, but have you ever wondered what is popping boba made of?

Popping boba has taken the culinary world by storm, adding a new kind of excitement and flavor to beverages and desserts. But what makes it different from traditional tapioca boba? Let’s take a closer look: what is popping boba made of, how it’s made, and how you can make it at home.

A Delectable Introduction to Popping Boba

Popping boba, or “bursting boba,” are those delightful little juice-filled pearls you find in your bubble tea. Traditionally used as a topping in drinks and desserts, popping fruit boba offers a surprising burst of flavor and a delightful texture that’s quite different from the tapioca pearls more commonly found in bubble tea.

Tapioca boba, or “pearls,” are made from the root of the cassava plant. The starch extracted from the root is rolled into small balls and cooked to create a chewy, jelly-like texture. Popping boba, on the other hand, is made with a different process and uses other ingredients.

The Ingredients Inside Those Pops

If tapioca pearls are made of cassava root starch, what about popping boba? What are popping boba balls made of exactly? The primary ingredient in popping boba is usually a combination of water, fruit juice or fruit puree, sugar, and tangy flavors for that zingy taste. However, the star ingredient responsible for the boba’s “pop” is often seaweed extract or alginate. This component is essential for creating the boba’s signature thin, edible membrane that bursts open when eaten.

Aside from sodium alginate, calcium salt, and edible colors are also added to create the visual appeal of popping boba. The fruit juice or puree used can vary. Still, in terms of variety, you can find popping boba in an impressive array of flavors that range from classic fruits like strawberry, blueberry, and mango to unique blends such as lychee, kiwi, and passionfruit.

The choice of fruit extracts or flavors depends on the manufacturer, and some may opt for natural colorants and flavors for a healthier twist.

Now that we’ve talked about the ingredients, how do you make popping boba at home? For the adventurous foodie, making popping boba at home can be a rewarding experience. To create popping boba, you’ll need just a few ingredients and some patience. Here’s a simplified recipe for DIY popping boba.

Ingredients:

  • 3g sodium alginate (can be found in specialty food stores or ordered online)
  • 2 tbsp mango cubes
  • Calcium lactate
  • Filtered water
  • 200ml water
  • Electric mixer or blender
  • 3 Large bowls
  • Syringe or Squeeze bottle
  • Spoon
  • Plastic wrap

Instructions:

  1. Soak the popping boba in calcium lactate for about 1 minute. The dropping process may take a while so we recommend scooping out the popping boba after 2 or 3 batches. Note that if it is left for an extended period, the boba’s shell will thicken and prevent it from popping or bursting as intended.
  2. Blend the mango cubes, water, and sodium alginate until smooth.
  3. Place the mixture into a large bowl and remove any bubbles on top using a spoon. Cover the large bowl with a plastic wrap and leave it for 4 hours or overnight.
  4. In another bowl, whisk together cold water and calcium lactate until the water turns transparent again.
  5. Use a dropper (like a syringe or squeeze bottle) to drop the mango/sodium solution into the calcium water. Watch as they quickly turn into spheres.  Do it one drop at a time.
  6. Use a strainer to get the boba out of the calcium water after a minute and transfer them to a different bowl of water for rinsing. Keep repeating this until all the popping boba is done.
  1. Serve the popping boba as desired, whether in a drink or as a topping for desserts. Enjoy the satisfying burst of flavor with every bite!
  2. Experiment with different flavors and fruits to create unique popping boba combinations.
  3. Store any leftover popping boba in an airtight container filled with water and refrigerate for up to 2 days.
